Vegetables of our Labors

Harvest season is almost over.  But we’ve had a good yield this year.  Next year we plan to build an additional box garden and do a few things differently.

1.  We won’t plant watermelon – it just didn’t work.  I think one of the reasons was that we used too small of a planter and planted to many…apparently watermelon get big!  Who knew!

2.  We won’t pour the carrot seeds out of the bag into the garden.  Though it makes cool looking carrots, they were WAY too thick and hence a lot smaller than we could have had.

3.  We won’t plant the onions as close together either…they didn’t get nearly as big as we wanted, but they were sure yummy!

4.  We’ll plant BEETS!  I love beets, and found out that Asher does too!  He eats them like candy!  That’s my boy Ash!

5.  We most likely won’t plant 5 zucchini plants!  Had we known how big they get and how much each plant yields….holy moly!  We’ve got zucchini coming out our ears!

Since we re-planted them when they started getting bigger, at my in-laws though, my mother-in-law has made several bottles of zucchini strawberry jam (which I tried today and it was REALLY good), and she’s also made some zucchini loaves.  Today I also made 5 loaves of zucchini bread – three different varieties!  I did just a plain old zucchini loaf, a zucchini chocolate chip loaf (which is extremely tasty!), and 3 zucchini banana chocolate chip loaves.  I haven’t tried the latter yet – but if it tastes as good as it sounds, you can bet I’ll be making more of that!  (This is a few days later, and I tried the banana/chocolate/zucchini loaf – to be honest it was pretty boring!  Won’t be making that again!  However, now that I’m addicted to my zucchini chocolate chip loaf, I may just want to plant that many zucchini again next year! Sadly the zucchini is almost gone from the garden now, and I’ll just have to wait till next harvest.)

6. We’ll most likely plant more strawberries, and now that we’ve experimented with a few different varieties, we’ll probably use the one we liked the most.  But I can’t tell you what kind that is.  I hope Justin knows!

7.  No lettuce.  Though it turned out just fine, we way preferred the spinach.  I think we even planted a little too much of that…couldn’t eat it fast enough.

8. We’ll probably try growing some tomatoes.  Justin has been talking about it for the last few years – I’m pretty sure next year we’ll take the plunge.

All in all it was a good planting season!  We’re still pulling carrots and onions out, but other than that, and using up the zucchini, it’s pretty much done!  Now for a long, cold winter…

Random Stuff Continued…

I’ve been taking advantage of this super crumby weather and getting some baking done.  My friend made me some bread not too long ago, made with that Red River Cereal.  It was sooooo good!  So I decided to make some of that.  I had tried it once, and it turned out ok, but I wanted to give it another go.  Well, I got pretty disappointed when I couldn’t find the recipe, but I googled it and thought I’d try one I found there.  Let me just say this:  YUM!   I’ve never made bread before actually…only ever buns and a few pathetic attempts with a bread machine…so this is quite the accomplishment for me!  Hang on a sec, I gotta give myself another pat on the back.

I’ve never made bread this way before, obviously, nor have I ever heard of it being done before.  But you have to make what is called a “sponge” the night before and let it sit for 12-15 hours.  Then you add the rest of the ingredients the next day and completely dissolve the sponge…it was strange, but it kind of makes sense.  The grains need to soak so that when the rest of the ingredients are added, they don’t use all the water, making a really dry loaf.  Listen to me!  I actually sound like I know what I’m talking about!

We were very impressed with it, anyways.  So impressed actually, that in the *last 2 days I’ve made 12 loaves!  And, I also made some buns but used. Cream of Wheat cereal instead…they turned out tasty as well!  It’s not very often I get 2 for 2 on the same baking day!  Woot woot!  (Wow…did I just woot?)  Check out the little display for the picture…I thought I was pretty clever throwing in the knife for effect.  You can kind of see the whole wheat flour in the back, that wasn’t actually placed there as part of the set-up but had it been turned English side facing us and moved to a more visible location, maybe that would have been better. Whatever…I don’t have to worry about that until some big advertising company stumbles across my blog and sees this beaut of a pic!

Oh, this story must be told.  My visiting teachers came *today, and we were talking about bread and I told them about my Red River bread.  I told them to remind me before they left, and I’d give them loaf to try.  Well of course they didn’t remind me, but after they had gone out the door,  I remembered so I grabbed a couple loaves and ran out the door just in time to catch the one lady.  She said they were going to another house so she could take one to her companion for me, but that she didn’t need to take one too.  I insisted, and she argued back that that was a lot of bread for us to give away…after I argued back that we had lots, and it was no big deal….anyways you get the picture.  So finally I won and as she was walking to her van Bryn, who was standing at the open door says in a really sad pathetic voice, “Now we don’t have ANY bread, Mommy!”  Of course my VT-er heard and stopped in her tracks, turned and held out the bread as if to give it back.  I was laughing and said, no seriously take it, we have lots!  (Which we do…I was in the middle of finishing off making 6 loaves!!)  It was just hilarious the timing Bryn had on that…the way she said it made it sound like we are in the depths of poverty (which isn’t far from the truth..) and that that lady was taking our last loaf of bread!  Twas funny.

(*) This blog was started probably over a week ago, so the “today’s” actually mean “over a week ago” but I didn’t want to go change the whole story.

A couple weeks ago, one of the members of our Bishopric wanted to come meet with me and Justin.  I know I’ve complained before about being on the Enrichment Committee for like 4 years, and was also in Activity Days…so I was really curious as to what they’d have me doing.  Certainly it couldn’t involve getting released from Enrichment!  Of course Justin and I did our speculating, and were quite sure I,’d be called to be Justin’s partner in teaching the Primary class he has right now.  The guy he team teaches with now is going on a mission soon, and so we were fairly confident that’s what it would be.  So, you can imagine my shock when I was called to be the new Beehive Adviser!  Crazy, eh!  I’ve never been in Young Women’s before (as a leader that is)…so this is kind of scary, yet exciting too – I’ve always wanted to work with the youth.  But yeah…mostly scary.  Did I mention I’m scared?  So now I’ll be preparing lessons for every Sunday, which frightens the begeebers out of me!  Anyways, I taught my first Sunday a couple weeks ago, and got to go to my first mutual (do they still call it that?) activity *last night.  It was pretty fun, actually…the girls are great – definitely have a lot of energy – but I’m excited to get to know them better.  I figured the Beehives would be a little calmer than the Activity Day girls…NOT SO!  Should be interesting.  Oh, and after the call was extended, I casually asked, “So, does this mean I’ll be released from my other callings?”  He said, “oh yes, for sure.”  However, on the Sunday I was sustained, I only got formally released from my Activity Days calling (I must say…I’m going to miss those Activity Days girls.  They were lots of fun!)…but was not released from Enrichment!!!  Unbelievable!  So, I’m a little confused, but I’ll keep doing both till I hear otherwise.

Buns, Buns and more Buns!

I’m no Martha Stewart (she cooks, right?)  But lately I’ve been in “cook mode” for some reason.  Most people think their moms are good cooks, but I don’t think…I KNOW!  There are few things she makes that I don’t like.  I’ve always absolutely loved my moms buns, but never dreamed I’d be able to actually make them myself.  Usually when you try to make someone elses recipe, it just doesn’t taste the same for some reason.  I’m happy (perhaps even a little proud if I dare say so) to say that my moms buns no longer intimidate me!  I can make them, and they taste exactly like they’re supposed to! Of course, it doesn’t always happen perfectly the first time.  Last week for example, I had quite the disaster.

See here…I had these all made and everything even rolled out and some put on a pan.  There was only one problem…they wouldn’t rise!  I had literally checked and re-checked the recipe 4 times cause I was quite sure it needed yeast, but do you think I could find it??  No!  Sure enough they didn’t rise, and were as hard as bricks even just as dough.  So I called my mom and asked if there was supposed to be yeast.  She said (after getting a good laugh), that of course there was yeast in the recipe!  So I checked again, and lo and behold there was the 2 Tblsp of yeast.  But to my credit, it wasn’t in line with all the other ingredients, it was kind of obscured in the other side with some other instructions.  So, this load went in the garbage!  They would have been more like weapons than buns, so they were better off in the garbage, since I was a little mad.  We don’t need any broken windows.

Determined to have some freshly made buns sitting on my cupboard by the end of the day, I went back to work and came up with these masterpieces.  Mmmmm!  They are good.  After spending the whole day in the kitchen making the crazy things, I was sure I wouldn’t make more buns EVER!  At least not until I own a decent mixer so I don’t have to do it by hand, and a dishwasher so I don’t have to spend an extra 2 hours just on clean-up!

Well, the week went on, and we were really enjoying these buns, and we got down to the last two bags in the freezer.  Crazy me decides, hey lets do that again!  So I did, and even made a double batch, so I could make some cinnamon buns too!  (I’ve never made them before…but I’ve seen it done!)  Anyways, Russell helped me mix things up until both our arms were about to fall of and then Justin stepped in with his fresh muscles, and we got the job done.  The cinnamon buns were pretty disastrous.  I think I cut them too thick and then took them out of the oven too soon.  

By the time I realized the cinnamon buns were still doughy in the middle (we were trying to get kids to bed and buns and everything cooked all at the same time) they had cooled off a bit, but I still put them back in the oven for a little longer, and that might explain why they were kind of dried out on the tops. Probably not, but I’m desperate for an excuse as to why they didn’t turn out, so we’ll go with that.  They stuck a mile out of the pan too.  They still tasted ok, the middle and bottom anyways, but there will be adjustments made next time I make them for sure.

Bryn helped by doing dishes.  She could do that for hours at a time.  Too bad the dishes don’t actually get clean!  Now that would be something!  She was in the kitchen working with the rest of us though, and that is what mattered.  

 

Anyways, my buns actually turned out.  Usually I make partly whole wheat ones, but they don’t taste quite the same as my moms white buns, so I went with all white this time.  (Normally we’re anti white bread as we never feels good after eating it, but for some reason these buns  my mom makes don’t effect me like that.)
